The Starbucks cinnamon dolce latte is a classic recipe on the coffee shop menu. It’s a an iced latte with sweet cinnamon syrup and topped with whipped cream and a dusting of cinnamon sugar.
We’re taking that beloved drink classic and making it at home. And dare I say it’s better (and cheaper!) than the famous coffee shop.
Imagine you make a latte with the leftover cinnamon toast crunch milk from your morning cereal. It tastes like that, but with caffeine. It’s the best.

Ingredients You Need
Cinnamon Dolce Syrup
- Sweetener: any sweetener of your choice will work for this recipe. The classic choice would be a brown sugar syrup, but you can also use white sugar, coconut sugar or maple syrup. We even tested this with monk fruit sweetener for a low carb/sugar option.
- Vanilla: vanilla extract or vanilla bean paste are so good.
- Ground cinnamon: this is the key ingredient after all!
- Whole cinnamon sticks: this is optional but it really makes the flavor of cinnamon shine.
Iced Latte
- Ice
- Espresso: this is our preferred coffee in a latte, but keep scrolling for a few other coffee options.
- Cinnamon dolce syrup (above)
- Milk: use your milk of choice like oat milk, almond milk, 2% or coconut milk.
- Whipped cream and cinnamon for topping
How to Make an Iced Cinnamon Dolce Latte
Here are the easy steps (with pictures) to make this copycat starbucks iced cinnamon dolce latte recipe.
- Cinnamon syrup: this is just like a traditional simple syrup, but with a lot of cinnamon flavor. Add all of the syrup ingredients to a small saucepan over medium high heat and bring to a boil. Turn the heat down to medium low and simmer for 10 ish minutes, until the sugar dissolves.
- Blend the milk: Pour 2-3 tablespoons of the cinnamon dolce syrup into a liquid measuring cup with your choice of milk. Use a hand frother to blend it together until frothy (a spoon works too it just won’t be frothy).
- Ice: Add ice cubes to a tall glass then pour the pumpkin spice milk mixture on top.
- Finish: pour the espresso on top and stir to combine. Top with whipped cream (optional, but not really), then top with a dash of cinnamon.
Do I Have to Use Espresso?
Espresso is the traditional way to make an iced latte, however, you have a few options when it comes to what kind of coffee to add. All three are great options, but I’m listing them in my preferred order:
- Espresso: use a fancy espresso machine or grab a cheap one on Amazon you can use on the stove top.
- Cold brew coffee: store bought or your own cold brew coffee are both great options.
- Very strong coffee: brew the strongest coffee you can for a latte
Tools You Need
- Espresso maker on the cheap. Or a full blown espresso machine and milk frother combo for a fancier set up.
- The cutest little nugget ice molds for next level iced coffee. Or a nugget ice maker.
- Iced coffee tumblers with glass straws.
What To Serve it With
A avocado smoothie, chocolate cherry smoothie or mango spinach smoothie are great options if you prefer to drink your breakfast.

Ingredients
Cinnamon Dolce Syrup
- 1 1/2 cup water
- 1/2 cup granulated sugar, maple syrup or monk fruit sweetener
- 2 teaspoons vanilla extract or vanilla bean paste
- 1 1/2 teaspoons cinnamon
- 3 cinnamon sticks optional
Iced Cinnamon Dolce Latte
- 1 cup ice
- 1-2 shots of espresso *see notes for coffee options
- 2-3 tablespoons cinnamon dolce syrup
- 1 cup oat milk or milk of choice
- Whipped cream and cinnamon sugar for dusting
Instructions
- Add all of the syrup ingredients to a small saucepan over medium high heat and bring to a boil. Turn the heat down to medium-low and simmer for 10-12 minutes, stirring ever 2-3 minutes, until the mixture has reduced by half and thickened.1 1/2 cup water, 1/2 cup granulated sugar, maple syrup or monk fruit sweetener, 2 teaspoons vanilla extract or vanilla bean paste, 1 1/2 teaspoons cinnamon, 3 cinnamon sticks
- Remove the syrup from the heat and allow it to cool slightly. You can store it in the fridge in an air tight container for up to 2 weeks.
- Add ice cubes to a tall glass then pour 3 tablespoons of the cinnamon dolce syrup on top.1 cup ice, 2-3 tablespoons cinnamon dolce syrup
- Brew a shot of espresso and pour it on top of the ice and syrup. Finish by pouring in the milk. Top with whipped cream and a dusting of cinnamon sugar.1-2 shots of espresso, 1 cup oat milk
