What Is an Iced Cinnamon Dolce Latte?

The starbucks cinnamon dolce latte is a classic recipe on the coffee shop menu. It’s a latte made with sweet cinnamon syrup and topped with whipped cream and a dusting of cinnamon sugar.

What does an Iced Cinnamon Dolce Latte taste like? Imagine you make a latte with the leftover cinnamon toast crunch milk from your morning cereal. It tastes like that, but with caffeine. It’s the best.

We’re taking that classic and making it at home. There are several reasons why we love a homemade cinnamon dolce latte:

  • It’s simple to make, using no-fuss ingredients you probably already have (cinnamon, sugar, vanilla etc)
  • It’s a fraction of the cost of the Starbucks version. Purchase all of the ingredients once and you can make this recipe multiple times.
  • It’s much healthier. You know exactly what’s in it (only real, whole ingredients). The Starbucks cinnamon dolce syrup doesn’t even list cinnamon as an ingredient.

Ingredient Notes

For the cinnamon dolce syrup (the star of this recipe)

  • Sweetener: any sweetener of your choice will work for this recipe. The classic choice would be a brown sugar syrup, but you can also use white sugar, coconut sugar or maple syrup. We even tested this with monk fruit sweetener for a low carb/sugar option.
  • Vanilla: vanilla extract or vanilla bean paste are so good.
  • Ground cinnamon: this is the key ingredient after all!
  • Whole cinnamon sticks: this is optional but it really makes the flavor of cinnamon shine.

For the ice cinnamon dolce latte

  • Ice
  • Espresso: this is our preferred coffee in a latte, but keep scrolling for a few other coffee options.
  • Cinnamon dolce syrup (above)
  • Milk: use your milk of choice like oat milk, almond milk, 2% or coconut milk.
  • Whipped cream and cinnamon for topping

Coffe Options

You have a few options when it comes to what kind of coffee to add to your lattes. All three of these are great options, but I’m listing them in our preferred order:

  1. Espresso: use a fancy espresso machine or grab a cheap one on Amazon you can use on the stove top.
  2. Cold brew coffee: store bought or your own cold brew coffee are both great options.
  3. Very strong coffee: brew the strongest coffee you can for a latte

How to Make an Iced Cinnamon Dolce Latte

Here are the easy steps (with pictures) to make this copycat starbucks iced cinnamon dolce latte recipe.

  1. Cinnamon syrup: this is just like a traditional simple syrup, but with a lot of cinnamon flavor. Add all of the syrup ingredients to a small saucepan over medium high heat and bring to a boil. Turn the heat down to medium low and simmer for 10 ish minutes, until the sugar dissolves.
  2. Blend the milk: Pour 2-3 tablespoons of the cinnamon dolce syrup into a liquid measuring cup with your choice of milk. Use a hand frother to blend it together until frothy (a spoon works too it just won’t be frothy).
  3. Ice: Add ice cubes to a tall glass then pour the pumpkin spice milk mixture on top.
  4. Finish: pour the espresso on top and stir to combine. Top with whipped cream (optional, but not really), then top with a dash of cinnamon.

Ingredients

Cinnamon Dolce Syrup (makes 4 servings)

  • 1 1/2 cup water
  • 1/2 cup granulated sugar, maple syrup or monk fruit sweetener
  • 2 teaspoons vanilla extract or vanilla bean paste
  • 1 1/2 teaspoons cinnamon
  • 3 cinnamon sticks optional

Iced Cinnamon Dolce Latte (16 ounces)

  • 1 cup ice
  • 1-2 shots of espresso *see notes for coffee options
  • 3 tablespoons cinnamon dolce syrup
  • 1 cup milk of choice (whole milk, 2%, coconut, almond milk, oat milk etc.)
  • Optional: whipped cream, dairy-free whipped cream and more cinnamon for dusting

Instructions 

  • Add all of the syrup ingredients to a small saucepan over medium high heat and bring to a boil. Turn the heat down to medium-low and simmer for 10-12 minutes, stirring ever 2-3 minutes, until the mixture has reduced by half and thickened.
  • Remove the syrup from the heat and allow it to cool slightly. You can store it in the fridge in an air tight container for up to 2 weeks.
  • Pour 3 tablespoons of the cinnamon dolce syrup into a liquid measuring cup with your choice of milk. Use a hand frother to blend it together until frothy (a spoon works too it just won’t be frothy).
  • Add ice cubes to a tall glass then pour the cinnamon dolce milk mixture on top. Finish by pouring the espresso (or coffee) on top and stir to combine. Top with whipped cream, if desired, then sprinkle with a little more cinnamon.

Notes

Storage: store leftover cinnamon dolce syrup in an airtight container in the fridge for up to 2 weeks. Store latte, without ice, in the fridge for up to 3 days.
Dairy-free: use a nondairy milk like almond, oat or coconut.
Low carb and low sugar: use monk fruit sweetener instead of maple syrup or sugar. We tested this recipe with TruEats Monk Fruit Sweetener. This latte has 4 net carbs if made with monk fruit.
