Tips for Making Gluten-Free Cookies

  1. Measure flour correctly. Ideally weigh the ingredients, but if you can’t, spoon and level for best results.
  2. Chill the dough when called for and even when it’s not. It hardly ever hurts to chill the dough.
  3. Use room temperature ingredients when called for. It helps mix the ingredients together better. A cold egg added to room temp butter will change the butter temperature, when you worked so hard to get it room temp.
