Holiday Bread Dipping Oil with Cranberries and Pistachios

I’ll be upfront: the first time I made this, it didn’t work. I had all the good stuff in the bowl (cranberries, pistachios, sun-dried tomatoes, Parmesan) and not nearly enough olive oil to go with it. It was more of a chunky paste than something you could dip bread into.
So I added more oil and tasted it again. It still needed a little something, so the second time around I added extra orange zest. That little bit of citrus is what made all the flavors finally click. Then I kept eating it for days afterward, scooping it up with gluten-free crackers whenever I walked past the fridge. That’s how I knew this one was a keeper.
My biggest tip from testing is to taste before you add more garlic or pepper. Garlic cloves and olive oils vary a lot, so start small and build from there.

Classic Dipping Oil Meets Holiday Flavors
You still get everything you expect from a good bread dipping oil: rich olive oil, fresh garlic, Parmesan, rosemary, thyme, and a pinch of red pepper flakes.
Then come the fun parts. Sweet, chewy cranberries. Salty, crunchy pistachios. Sun-dried tomatoes for a savory pop. Orange zest to brighten everything up.
The red, green, and orange look so festive on the table, so it feels special without any extra work. Set it out next to a fall charcuterie board for Friendsgiving, bring it to Christmas Eve, or make it just because you have a loaf of focaccia and a free Tuesday night (no judgement here).
Ingredients You’ll Need
Exact measurements are listed in the recipe card below.

- Olive oil: The oil is the base of the whole dip, so use one you’d happily eat on its own. If it’s really peppery, it already brings some heat, so taste before adding black pepper.
- Garlic: Grate it finely so it melts into the oil. If your cloves are large, start with one, taste, and add the second only if you want more bite.
- Sun-dried tomatoes, dried cranberries, and roasted pistachios: Chop all three finely. Small pieces stay in the oil and land on every bite of bread, instead of sinking to the bottom of the bowl. Have extra pistachios left over? Use them in this pistachio pesto.
- Orange zest: Don’t skip it! It balances the sweet cranberries and salty Parmesan.
- Parmesan: Finely grated works best so it blends into the oil.
- Fresh rosemary and thyme: They bring a woodsy, holiday flavor. Chop the rosemary finely, since it can be a little tough.
- Flaky salt and cracked black pepper: Add these at the end, to taste.
How to Make Holiday Bread Dipping Oil
This takes about 10 minutes, and most of that is chopping.

Step 1. Prep your add-ins: Finely chop the sun-dried tomatoes, cranberries, pistachios, rosemary, and thyme. Grate the garlic, Parmesan, and orange zest.

Step 2. Pour the oil into a shallow dish: A wide, shallow bowl or plate makes dipping easy and shows off all the color.

Step 3. Stir everything in: Add the add-ins, Parmesan, herbs, orange zest, and red pepper flakes, then give it a good stir.

Step 4. Taste and adjust: Taste it with a piece of bread, since that’s how you’ll be eating it.
Adjust and Serve as Needed
- Too thick? You want the add-ins surrounded by oil, not packed together like a spread. Add a splash more oil.
- Garlic: Want more bite? Add the second clove.
- Heat: Add more red pepper flakes or black pepper only after tasting.
- Brightness: If it tastes a little flat, add a bit more orange zest.
- Salt: Finish with a pinch of flaky salt. Parmesan is already salty, so taste first.
Serve with warm focaccia or toasted Italian bread. Gluten-free crackers work great too, and they’re an easy swap if someone at the table doesn’t eat bread.
Make It Ahead (Perfect for Holiday Hosting)
Chop all the add-ins ahead of time, then stir everything into the oil right before guests arrive. If you’re putting together a full appetizer spread, this pairs perfectly with my cranberry whipped feta dip, which you can also make ahead.
Store leftovers in an airtight container in the fridge for up to 5 days. The olive oil firms up and looks cloudy when it’s cold, and that’s completely normal! Let it sit at room temperature for a bit, give it a stir, and it’ll loosen right back up.
Because it has fresh garlic and parmesan in it, always keep leftovers in the fridge, not on the counter.
