- Use a kitchen scale if you have one. The right flour-to-butter ratio is what separates a thick, bakery-style cookie from a flat, crispy one. Spoon and level if you don’t have a scale.
- Butter temperature matters more than you think. Room temperature means cool to the touch, still slightly firm. If your butter is greasy or looks shiny, it’s too warm and your cookies will spread.
- Pull them out while they still look slightly underdone. The centers will continue to set on the baking sheet. This is the difference between a soft cookie and an overdone one.
- Double the batch and freeze half. Almost every cookie on this list freezes beautifully , baked or as dough balls. Future you will be grateful.
- Use light colored baking sheets. Dark cookie sheets absorb heat faster, spread cookies more, and burn the bottoms before the cookie is done.
