If you follow me over on Instagram, it’s no secret I”m a HUGE taco lover. And that’s kind of an understatement. I wish I was joking, but I eat tacos at least three times a week. Plus for lunch and as leftovers. I wish I could say it was a problem, but when they’re as delicious and healthy as these taco stuffed sweet potatoes, it’s not a problem at all.

After this recipe, we decided to start using a roasted sweet potato as a taco shell and even a hamburger bun for so many of our recipes like these healthy sloppy joes.

Are taco stuffed sweet potatoes healthy?

These taco stuffed sweet potatoes are really healthy. If you’re following a gluten free, dairy free, paleo or whole 30 diet then this recipe is just right for you!

I love this recipe because it covers all of the macronutrients in one meal if you add some guac on top. Complex carbs are from the sweet potatoes, protein from the turkey and healthy fats from the guac (or avocado crema). I also like to add cilantro and tomatoes as well.

Are taco stuffed sweet potatoes easy to make?

Taco stuffed sweet potatoes are so easy to make! All you do is bake the sweet potatoes, brown the ground turkey and put them together with all the toppings!

Baking the sweet potatoes takes the longest, but all you do is poke them with a fork and throw them in the oven. There is little to no thinking involved! And with so few ingredients, it’s so easy to pick them up from the store. You might even have all of the ingredients right now!

How to make sweet potatoes in the oven:

To make sweet potatoes in the oven, preheat the oven to 400°F. Pierce the sweet potatoes with a fork a few times then bake on a sheet pan for 45 minutes.

Ingredients

Tacos

  • 4 medium sweet potatoes
  • 1 Tablespoon olive oil
  • 1 lb ground turkey or ground beef
  • Kosher salt to taste
  • 1 packet taco seasoning I use Siete Mild taco seasoning
  • 8 oz chihuahua cheese

Street Corn Salsa

  • 1 Tbsp olive oil
  • 1 cup fresh corn about 1 ear
  • 1 large avocado diced
  • 1 clove garlic minced
  • 2 Tbsp lime juice about 1 lime
  • 1/4 cup finely chopped cilantro
  • 1 tsp kosher salt

Sour Cream Crema

  • 1/2 cup sour cream
  • 2 Tbsp lime juice about 1 lime
  • 1 clove garlic minced
  • 1/2 tsp kosher salt
  • 1/2 tsp onion powder

Instructions 

  • Preheat the oven to 425. Poke holes in the sweet potatoes with a fork. Rub them with olive oil and sprinkle generously with salt. Roast for 50-60 minutes, until fork tender and the skin is crispy.
  • Stir together the crema ingredients and store in the fridge. Add enough milk until it’s a drizzling consistency.
  • Drizzle olive oil in a medium skillet over medium high-heat. Cook the corn with olive oil over medium high heat heat until charred, 3-4 minutes. Stir together with the remaining salsa ingredients and store in the fridge.
  • Cook the meat in a skillet until no pink remains and follow instructions to stir in the taco seasoning. 
  • Cut the sweet potatoes in half lengthwise. Fill with taco meat and sprinkle with cheese. Broil in the oven for 2-3 minutes, until the cheese is melted. Top with avocado corn salsa and a drizzle of crema and extra cilantro.
