I’m always on the hunt for the simplest breakfast I can make in minutes. The easiest ones don’t always have tons of flavor, but not this one!
This viral recipe will change your weekday mornings for the better. Recipe developer Grace Elkus originally shared this idea on Instagram and it took off on social media for good reason.
I tested it a few times to share some of my best tips, like cooking it crumbling the feta right on the hot pan so it golden and crispy, using a fish spatula to carefully remove it from the pan, and omitting the salt because feta is salty enough!
This easy breakfast is just what we all need in the mornings, and I promise it will be added to your weekly morning routine. It’s my new obsession for a quick morning meal.

How to Make Viral Feta Fried Eggs
Here are the step-by-step instructions to make this crispy feta fried egg recipe. Jump to the recipe card for printable instructions.
- Crumble feta: Heat a small nonstick skillet over medium heat. Once it’s hot, sprinkle the crumbled feta in the shape of a ring (like a donut). Cook to let the cheese melt, 1-2 minutes.
- Cook the egg: Crack an egg in the center of the feta ring and sprinkle and top it with red pepper flakes and black pepper. Cook for 3-5 minutes, until the egg whites are set and the feta turns golden and crispy.
- Prep the tacos: Char a tortilla over a open flame or broil in the oven so it’s pliable. Spread avocado on top and top with greens mixed with olive oil (optional).
- Serve and enjoy! Use a fish spatula to scrape the egg off the pan. Be careful not to break the yolk. Top the warm tortilla with the crispy feta eggs. Add any other toppings you want, like basil pesto, pickled onions, and fresh herbs.
Prefer medium or over hard eggs? Cover the pan with a lid to cook the yolks.
Tools You Need
- A nonstick small frying pan contains the egg into a small space. However, any non-stick pan will work.
- A lid for the frying pan if you want over hard or medium eggs.
- A thin spatula, like a fish spatula, to remove the crispy fried eggs from the pan.
- Gas range, grill, or oven broiler to char the tortillas.
Recipe Variations
- Add more greens by mixing arugula, shredded kale, or spinach to the taco.
- Add chili oil or chili crisp in the feta circle before the egg.
- Top it with basil pesto, pickled onions, cilantro chimichurri, hot sauce, or fresh herbs.
- Put the egg on pita bread, sourdough, or plain toast.
- Add roasted vegetables or cherry tomatoes.
Quick Tips
- Make sure to use a quality nonstick pan. You can rub some avocado oil on the pan to make sure it doesn’t stick. The feta will stick to stainless steel.
- Use feta in brine or a block of feta, rather than pre-crumbled feta, for best melting.
- Use a fish spatula to remove the feta and egg from the pan for best results.
- Remove the feta and egg right away, it will continue to crisp as it cools.
- Add a lid to the pan if you prefer medium or over hard eggs.
How to Store
Crispy feta fried eggs are best eaten right away. You can store them in an airtight container in the fridge for up to 2 days. Reheat in the pan, oven, or air fryer for a few minutes. I don’t recommend freezing feta fried eggs.
Can I Use Another Type of Cheese?
Parmesan cheese or Pecorino cheese are great options and will give you the same crispy texture. You could also use goat cheese instead of feta cheese.

Ingredients
- 1/4 cup feta cheese crumbled
- 1 large egg
- 1/4 teaspoon black pepper
- Pinch of red pepper flakes
- 1 corn tortilla grain-free tortilla, or flour tortilla
- 1/2 avocado
- 1/4 cup micro greens or arugula
- 1 teaspoon olive oil
Instructions
- Spray a medium skillet with nonstick spray or rub it down with an oiled paper towel. Heat it over medium high heat. Once it’s hot, sprinkle the crumbled feta in the shape of a ring (like a donut). Cook for 1-2 minutes to melt slightly.
- Crack an egg in the center of the feta ring and sprinkle with black pepper flakes and red pepper. No need to add salt because the feta is salty. Cook the egg uncovered for 3-5 minutes, until the egg whites are set.
- While it’s cooking, heat the tortilla over the open flame of a gas range for 15-20 seconds on each side, using tongs to flip it. You could also broil them in the oven.
- Spread avocado onto the tortilla. Toss the greens with a drizzle of olive oil and place it on top of the avocado.
- Remove the egg from the heat and use a thin spatula, like a fish spatula, to remove the feta egg from the pan. Place on top of the prepared tortilla and enjoy hot.
