Ingredients

  • 1 8oz block feta cheese
  • 10 eggs
  • 1 Tablespoon olive oil
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • Sourdough bread or toast for serving
  • For serving: fresh dill mint, pickled onions, or arugula

Instructions 

  • Preheat the oven to 400°F and grease a 8×8-inch square baking dish.
  • Place the block of feta in the center of the baking dish. Crack the eggs around the feta. Drizzle the eggs and feta with olive oil and sprinkle the salt and red pepper flakes on top.

  • Bake in the preheated oven for 20-22 minutes, until the eggs are just set. Remove from the oven and immediately use a fork to scramble the eggs and mix it with the baked feta cheese. It’s okay if some egg white looks runny as it will continue to cook as it cools.
  • Toast bread of choice and drizzle with more olive oil if desired. Serve scrambled feta eggs with arugula, pickled onions, and fresh herbs to taste.
