Mango Spinach Smoothie

Blend up mango and spinach and start your day right with this mango spinach smoothie. Smoothies are a great way to fuel your body with healthy fats, protein, leafy greens and fiber.

Servings: 1 large smoothie

INGREDIENTS

  • 1 cup baby spinach
  • 1 cup nut milk
  • 3/4 cup frozen mango chunks
  • 1/2 frozen banana
  • 1/2 avocado *
  • Optional for protein: 1/2 cup greek yogurt or 1 scoop of vanilla protein powder

INSTRUCTIONS

  • Add spinach and milk and blend to a high-speed blender and blend until the spinach is broken down and the mixture resembles green milk.
  • The one technique tip that makes it smoother: Add the spinach and liquid to the blender first and blend until completely smooth before adding the frozen fruit. This prevents the stringy green bits that can happen when you layer everything in at once and hope for the best. Thirty seconds on high with just the greens and liquid, then add the frozen mango and blend again. Perfectly smooth every time.
  • Add the rest of the ingredients and blend on high until smooth. Check the consistency and add more milk a few tablespoons at a time if desired.
  • Serve right away.

Notes

  • Blend spinach + liquid first for the smoothest result. Then add frozen fruit.
  • Frozen mango works better than fresh — it makes the smoothie thicker without ice.
  • Make-ahead: blend and store in a sealed jar in the fridge for up to 24 hours. Shake before drinking.
  • For a protein boost: add a scoop of vanilla protein powder or two tablespoons of Greek yogurt.
  • Dairy-free: use any plant-based milk. Coconut milk is especially good here.
