Green Juice with Pineapple

This green juice with pineapple is a refreshing, blender-friendly detox drink made with spinach or kale, cucumber, celery, green apple, and lemon. Naturally sweet, anti-inflammatory, and easy to prep ahead—no juicer needed!

INGREDIENTS

  • 1 1/2 cups water
  • 1 cup ice
  • 2 cups kale or spinach
  • 1 green apple cored and cut into chunks
  • 1 cup pineapple fresh or canned with no sugar added
  • 1/2 cup parsley leaves
  • 1 tablespoon fresh mint
  • 1 medium cucumber quartered
  • 2 celery stalks roughly chopped
  • 1 inch piece of ginger peeled
  • Juice from 1 lemon

INSTRUCTIONS

  • Wash all vegetables and fruits well. Add water to a high-speed blender then add the rest of the ingredients. Blend on the highest setting for at least one minute, until completely combined and is similar to a smoothie consistency.

  • To separate the juice from the pulp, place a nut milk bag or fine mesh seive over a large glass measuring bowl (I use an 8 cup glass measuring bowl). Pour the juice mixture into the bowl through the nut milk bag, squeezing the mixture through the bag so all of the liquid and pulp is separated. Reserve the pulp to put in muffins or crackers.
  • Drink immediately or place in a sealed glass jar in the refrigerator for up to 2 days. Shake well before drinking. This recipe doubles well.

Notes

Storage: Store any leftover juice in an air tight cup with a lid or glass bottle in the fridge for up to 3 days. Shake well before drinking.
Make it in a juicer: Prep the ingredients as directed and run them through your juicer. Use the tamper as needed.
