INGREDIENTS

  • 1/2 (about 1/3 cup) small red onion diced
  • 1/2 (about 1/3 cup) red bell pepper diced small
  • 1/2 jalapeno pepper minced
  • 2 Tablespoons fresh cilantro finely chopped
  • 2 Tablespoons fresh lime juice 1 (about 1 lime)
  • 1 (about 1 cup) ripe mango peeled and diced small
  • 3 (about 3/4 cup) yellow peaches pitted and diced small
  • 2 cloves garlic cloves minced
  • 1/4 teaspoon kosher salt plus more to taste

INSTRUCTIONS

  • Add all of the ingredients to a medium serving bowl. Toss well to coat everything in the lime juice and salt.
  • Taste and add more salt or lime juice as needed. Serve immediately or cover and store in the fridge for up to 2 days.
