- 1/2 (about 1/3 cup) small red onion diced
- 1/2 (about 1/3 cup) red bell pepper diced small
- 1/2 jalapeno pepper minced
- 2 Tablespoons fresh cilantro finely chopped
- 2 Tablespoons fresh lime juice 1 (about 1 lime)
- 1 (about 1 cup) ripe mango peeled and diced small
- 3 (about 3/4 cup) yellow peaches pitted and diced small
- 2 cloves garlic cloves minced
- 1/4 teaspoon kosher salt plus more to taste
Add all of the ingredients to a medium serving bowl. Toss well to coat everything in the lime juice and salt.
Taste and add more salt or lime juice as needed. Serve immediately or cover and store in the fridge for up to 2 days.
