Creamy Root Beer Cocktail

This creamy root beer cocktail is the easiest way to turn a classic root beer float into a grown-up drink. Made with root beer, spiced rum, and RumChata, it’s smooth, lightly spiced, and perfectly creamy with that nostalgic vanilla root beer flavor in every sip. It mixes together in about 5 minutes and feels like the dessert cocktail version of your favorite soda shop treat.

INGREDIENTS

  • 6-8 ounces Root Beer (Note 1)
  • 2 ounces dark spiced rum (Note 2)
  • 2 ounces Rumchata or Bailey's Irish Cream (or heavy cream)
  • Crushed ice and whipped cream for serving

INSTRUCTIONS

  • Fill a glass with crushed ice. Pour the root beer and rum in the glass and stir to combine. Top it with Rumchata and mix again until combined.
  • Top with whipped cream and serve right away.

Notes

Note 1. Root Beer. You can use any brand of root beer for this cocktail. Not Your Father’s Root Beer will give you even more alcohol percentage. I tested this with regular root beer, Not Your Father's Root Beer and with Olipop root beer—all were delicious. Or try a diet root beer if you prefer that.
Note 2. Rum. I've also made this with Pinnacle Whipped vodka and it was so good. You can try that if you prefer vodka to rum.
Root Beer Float: Try serving this with vanilla ice cream for an adult version of a root beer float.
