These brownie overnight oats are thick, creamy, and deeply chocolatey, with protein powder, Dutch-process cocoa, almond butter, and chia seeds. Finish them with a thin chocolate shell and colorful candy-coated chocolate chips for a Cosmic Brownie-inspired breakfast you can prep ahead for the week.

INGREDIENTS

  • 1/2 cup old-fashioned rolled oats certified gluten-free if needed
  • 1 Tablespoon chia seeds
  • 1 scoop chocolate protein powder I used Be Well by Kelly
  • 1 1/2 Tablespoons Dutch process cocoa powder
  • 1 Tablespoon almond butter peanut or cashew works too
  • 1 teaspoon vanilla extract or vanilla bean paste
  • Pinch of kosher salt
  • 2/3 cup unsweetened almond milk but any milk works
  • 1-2 Tablespoons semi-sweet chocolate chips or dark chocolate chips
  • Cosmic candy coated chocolate chips for serving

INSTRUCTIONS

  • Add the rolled oats, chia seeds, protein powder, cocoa powder, almond butter, vanilla, salt, and almond milk to a meal-prep container or jar. Stir well to combine. Taste and add 1-2 teaspoons of maple syrup if needed, depending on the sweetness of your protein powder.
    1/2 cup old-fashioned rolled oats, 1 Tablespoon chia seeds, 1 scoop chocolate protein powder, 1 1/2 Tablespoons Dutch process cocoa powder, 1 Tablespoon almond butter, 1 teaspoon vanilla extract, Pinch of kosher salt, 2/3 cup unsweetened almond milk
  • Cover and refrigerate overnight, or for at least 6 hours.
  • Right before serving, melt the chocolate chips in a small microwave-safe bowl. Pour the melted chocolate over the overnight oats and spread it to the edges. Sprinkle with candy-coated cosmic chocolate chips, if using. Freezer for 5 minutes, until the chocolate shell is set.

  • Crack through the chocolate shell and enjoy right away, or store covered in the refrigerator for up to 4 days.

Notes

For thicker oats: Use 1/2 cup milk instead of 2/3 cup.
Adjust the sweetness: Protein powders vary in sweetness, so taste the mixture before chilling and add maple syrup as needed.
Protein powder: Different protein powders absorb liquid differently. If the oats are too thick after chilling, stir in a splash of milk before adding the chocolate shell.
Dutch-process cocoa: Dutch-process cocoa is treated with an alkaline solution to reduce its natural acidity, which gives it a darker color and smoother, less bitter chocolate flavor than regular cocoa powder. If you have regular on hand, you can use them, they may just have a slightly less deep brown chocolate color.
