Soft Pumpkin Cookies with Cream Cheese Frosting

Butter Granulated sugar Baking soda Baking powder Salt Cinnamon Pumpkin pie spice Egg Vanilla extract Pumpkin puree All-purpose flour Cream cheese Powdered sugar

What You Need:

Cream the butter

Beat the butter  on medium to high speed for 1 minute. Add sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice and beat until well combined.

Add the pumpkin

Beat the egg and vanilla until yellow streaks are gone then add the pumpkin puree. Finally, add the flour and beat on medium speed until completely incorporated.

Scoop the cookies

Use a heaping tablespoon or medium sized cookie scoop to drop the cookie dough balls a few inches apart on prepared cookie sheet. The dough will be wet.

Bake

Bake for 10 to 12 minutes or until tops are set and no longer look wet. Allow to cool on cookie sheet for a few minutes then transfer to wire rack

Frost

Beat the butter and cream cheese then sift in the powdered sugar then add the vanilla. Frost the cookies with cream cheese frosting when they're completely cool.
