Add water, agave, sliced jalapeño and ginger to a saucepan and bring to a boil. Simmer for 1-2 minutes then remove it from the heat and stir in the mint.

Strain the simple syrup into a cocktail shaker or a cup with a lid then add the tequila, lime juice, jalapeno and mint. Shake well to combine.

Fill copper mugs (if you have them) with ice and divide the mixture between them evenly. Top with ginger beef and garnish with fresh mint and lime.
