Kansas Caviar

  • 2 cans black beans rinsed and drained
  • 2 cans black eyed peas rinsed and drained
  • 2 cans yellow corn rinsed and drained
  • 1 green bell pepper finely chopped
  • 1 red bell pepper finely chopped
  • 1/2 red onion finely chopped
  • 4 green onions chopped
  • 1/2 bunch fresh cilantro chopped
  • 1 cup apple cider vinegar
  • 1/2 cup olive oil
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon water
  • 2 bags tortilla scoops


  • Add all of the ingredients, except cilantro, to a large bowl and mix well. Cover and let sit overnight in the fridge to marinate. Add cilantro and mix well before serving. Serve with tortilla chips (I recommend the scoops to get as much dip as possible).
