Puppy Chow Without Peanut Butter

- 7 ounces (6-7cups; 1/2 box) rice Chex cereal
- 1 1/4 cups (225g) semi-sweet chocolate chips (Note 1)
- 3/4 cup Biscoff cookie butter (Note 2)
- 1/4 cup (4 Tablespoons; 56g) unsalted butter
- 2 teaspoon vanilla extract
- 3-4 cups powdered sugar
Add chocolate chips, cookie butter and butter to a medium microwave safe bowl. Microwave on high heat in 30-second intervals, stopping to stir, until melted and smooth. Stir in the vanilla extract.
Add the Chex cereal to a large bowl and pour the melted chocolate mixture on top. Use a rubber spatula to stir and fold the chocolate into the cereal, until it's coated. Be careful not to break up the cereal, you want some large globs of chocolate and Chex (for the big clusters). Allow the mixture to cool slightly (5-10 minutes).
Transfer the mixture to a ziplock bag (you might need two). Add one cup of of the powdered sugar, zip the bag closed, and gently shake and spin the bag to coat the Chex and chocolate.
Add another 2 cups of powdered sugar and repeat, until the puppy chow is completely coated in sugar and each piece is mostly white. Add up to 1 more cup of powdered sugar as needed.
Store in an airtight container at room temperature for up to 1 week or in the freezer for 3-4 months (I love frozen puppy chow!).
Note 1. Chocolate. I've also tested this recipe with dark chocolate and milk chocolate. Dark chocolate was delicious and balanced. You can use milk chocolate, but it will be a little on the sweet side because of the cookie butter and powdered sugar.
Note 2. Cookie Butter. You can buy cookie butter at any grocery store. We also love granola butter too, which would be another muddy buddy alternative to nut butters if you have a tree or peanut allergy. Just can't do peanuts? You could swap the cookie butter for cashew butter (mild flavor) or almond butter.
