Kale and Goat Cheese Salad

  • For the Salad:
  • 4 cups kale shredded
  • 4 oz goat cheese crumbled
  • 1/2 cup craisins
  • 1/2 cup walnuts or pine nuts
  • For the dressing:
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • juice from 1 lemon
  • 1 tablespoon honey
  • salt and pepper to taste


  • To make the dressing, add all of the ingredients to a medium bowl and whisk together until combined. Set aside.
  • To make the salad, toss kale with goat cheese, craisins and nuts until mixed well. Pour dressing over top and toss agin. Serve immediately.
