These flourless peanut butter cookies are made in less than 20 minutes! They don't include any flour so they're gluten free, plus there's no butter in this recipe either. You will love how delicious they are!

Flourless Peanut Butter Cookies

Ingredients

  • 1 cup creamy peanut butter I used JIF Natural Peanut Butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  • In a large bowl with your hand mixer or in the bowl of a stand mixer, beat the peanut butter, granulated sugar and brown sugar together on high speed until creamy and smooth, 2-3 minutes. Add the egg, vanilla, baking soda and salt and mix until combined.
  • Using a heaping tablespoon, roll dough into balls and place on prepared baking sheet approximately 2 inches apart. Gently smash the dough with the back of a fork in a criss cross shape. Bake cookies 7-9 minutes being careful not to overbake.
  • Remove cookies from oven and allow to cool on baking sheet for two minutes. Transfer to wire rack to cool completely.
