Preheat the oven to 350F. Line a large cookie sheet with parchment paper and set aside.
In a large mixing bowl, add all ingredients and stir to combine with a rubber spatula or wooden spoon. Add the cinnamon, walnuts or chocolate chips if desired and stir well again.
Use 1/3 cup measuring cup to scoop out mixture and place on prepared baking sheet. You should get about 9 large cookies. Gently flatten with the back of the measuring cup. Cookies won't spread in the oven. Bake for 18-20 minutes, or until set. Allow to cool on the baking sheet or on a cooling rack.
To freeze: allow to cool completely then store in an air tight container or bag for up to 3 months. Thaw overnight and warm up in the microwave or oven at 350°F until warmed all the way through.
