Lucky Charms Rice Krispie Treats Recipe

These super chewy Lucky Charms Rice Krispie treats made with extra Lucky Charms marshmallows are perfect for St. Patrick's Day (or any day of the year). A simple, no-bake, nostalgic recipe that the kids will love to help you make!

Ingredients

  • 6 Tablespoons (3/4 stick; 170g) unsalted butter
  • 1 (10-ounce) bag mini marshmallows
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 7 cups Lucky Charms cereal
  • 1 1/2 cups extra lucky charms cereal optional (Note 1)

Instructions

  • Line a 8x8-inch square baking dish with parchment paper.
  • Melt the butter in a very large pot over medium heat. Once melted, add the marshmallows and stir frequently until they're melted and combined with the butter. Remove from the heat and stir in the vanilla and a pinch of salt.
  • Fold in the cereal and stir to coat it in the gooey marshmallows. 
  • Lightly grease a rubber spatula and use it to transfer the cereal mixture to the prepared baking pan. Spread it out to each corn and gently press it down into each corner. Working quickly, sprinkle the extra colorful marshmallows on top and use your hands to gently press them into the top of the krispie treats to help them stick.  
  • All them to set at room temperature for at least 1 hour. Use the parchment paper to lift the rice crispy treats out of the pan and use a sharp knife to cut into squares. Store them in an airtight container between sheets of wax paper or parchment paper at room temperature for up to 3 days.

Note 1. Marshmallows. You can purchase extra Lucky Charms Marshmallows on Amazon (affiliate) or buy an extra box of Lucky Charms and pick out the marshmallows.
