Loaded Oatmeal Cookie Energy Bites [Gluten Free]

Healthy and easy to make, these oatmeal cookie energy bites are filled with peanut butter, oats and no refined sugar. These no bake snacks are so to please every one!

Ingredients

  • 2 1/2 cups oats gluten free
  • 8 pitted dates
  • 1 cup creamy peanut butter I used JIF
  • 1/4 cup honey or pure maple syrup for the vegan option
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/3 cup mini chocolate chips dairy free for the vegan option
  • 3/4 cup raisins

Instructions

  • Combine the oats, dates, peanut butter, honey (or maple syrup), vanilla, sea salt and cinnamon in the bowl of a food processor. Blend until completely combined, about 1 minute. Roll into ball to make sure it sticks together. If necessary, add more peanut butter a tablespoon at a time until you reach desired consistency.
  • Once it comes together, add the mini chocolate chips and raisins and mix well with a wooden spoon or rubber spatula. Form into 1.5 - 2 inch balls and store in the refrigerator for one week or in the freezer for up to one month.
