If I can guarantee one thing for our St. Patty’s Day plans, it’s these Lucky Charms Rice Krispie treats. They take a classic Rice Krispie treat and add everyone’s favorite part: the reserved Lucky Charms marshmallows. Who could argue with extra marshmallows?

It feels like a rite of passage to make this nostalgic treat for my kids. The best part about a bowl of Lucky Charms was always picking out extra marshmallows from my favorite cereal box. So how fun is it to make this easy dessert as an adult, where you purposefully top Rice Krispie treats with those colorful marshmallows?

This easy recipe puts a fun twist on traditional Rice Krispie treats. Chewy, crispy, light, and sweet marshmallow bars with extra sweetness and color throughout. And that pinch of salt is the secret to bringing out the sweetness in Rice Krispie treats.

How to Make Lucky Charms Rice Krispie Treats

Here are the basic steps, with images, for these Lucky Charms marshmallow treats. Skip down to the recipe card below for the full printable recipe.

Melt the Butter and Marshmallows

Melt the butter and add the marshmallows, stirring frequently until they’re melted and combined. Remove from the heat and stir in the vanilla and salt.

Stir in the Cereal

Fold in the cereal and stir to coat it in the marshmallow mixture.

Transfer to the Pan and Add More Marshmallows

Transfer the cereal mixture to the square pan lined with a piece of parchment paper. Spread it out to each corner in an even layer. Gently press it down into each corner. Sprinkle the extra colorful marshmallows on top and gently press them into the top of the krispie treats.  

Success Tip: Purchase extra Lucky Charms marshmallows online at Amazon or buy an extra box of Lucky Charms and pick out all of the marshmallows.

Set, Cut, and Serve!

For the best results, allow them to set at room temperature for at least 1 hour. Lift them out of the pan and use a sharp knife to cut the homemade Lucky Charms treats into squares. Serve and enjoy!

Recipe Variations

  • If you want the Rice Krispie Treats to have green color, just add a few small drops of green food coloring to the marshmallow mix.

Lucky Charms Rice Krispie Treats Recipe

Ingredients

  • 6 Tablespoons (3/4 stick; 170g) unsalted butter
  • 1 (10-ounce) bag mini marshmallows
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 7 cups Lucky Charms cereal
  • 1 1/2 cups extra lucky charms cereal optional (Note 1)

Instructions 

  • Line a 8×8-inch square baking dish with parchment paper.
  • Melt the butter in a very large pot over medium heat. Once melted, add the marshmallows and stir frequently until they're melted and combined with the butter. Remove from the heat and stir in the vanilla and a pinch of salt.
  • Fold in the cereal and stir to coat it in the gooey marshmallows. 
  • Lightly grease a rubber spatula and use it to transfer the cereal mixture to the prepared baking pan. Spread it out to each corn and gently press it down into each corner. Working quickly, sprinkle the extra colorful marshmallows on top and use your hands to gently press them into the top of the krispie treats to help them stick.  
  • All them to set at room temperature for at least 1 hour. Use the parchment paper to lift the rice crispy treats out of the pan and use a sharp knife to cut into squares. Store them in an airtight container between sheets of wax paper or parchment paper at room temperature for up to 3 days.
