These healthy buckeyes are a sweet Christmas treat you can make with 5 main ingredients. They’re low carb, gluten free and paleo! They’re made with almond butter, coconut oil, almond flour and chocolate chips for an easy no bake recipe.

Day 3 of Christmas cookie week is here! So far we’ve shared no bake chocolate oatmeal cookies and gluten free and paleo snickerdoodles. And now we’ve got healthy buckeyes!

These healthy buckeyes are paleo and gluten free and tI’m even sharing a keto version for all my low carb friends. I love them because they’re super simple to make. No baking required!

What is keto friendly peanut butter?

Keto friendly peanut butter is a drippy peanut butter that doesn’t have any added sugar. It’s a natural peanut butter that’s made with only peanuts. This kind of peanut butter only has 3.5 net carbs for 2 tablespoons so it’s a great keto option. Which is why it’s so great to use in the keto version of these healthy buckeyes.

How do you make healthy buckeyes?

Start my creaming together the peanut butter (or almond butter for a paleo version), maple syrup and coconut oil using an electric hand mixer until very smooth. Next, stir in the almond flour, salt and vanilla and mix well.

Chill the mixture in the freezer for 30 minutes or until firm enough to roll into balls. Once they’re chilled, roll the mixture into one inch balls (about 22-25) and place them on a parchment or wax paper-lined baking sheet. Put a toothpick in each one (for easy dipping) then place back in the freezer for 30 minutes to set again.

While they’re freezing, make your dipping chocolate. If using chocolate chips or chopped chocolate, simply place in a microwavable bowl and melt on increments of 30 seconds, stirring in between, until fully melted.

If you’re making the keto version of these healthy buckeyes, melt the coconut oil, vanilla, salt, unsweetened cocoa powder and your favorite sugar substitute in a medium bowl and set aside.healthy buckeye recipe

How do you dip buckeye balls?

Once you have your frozen peanut butter or almond butter balls with the toothpicks inserts, it’s time to dip them. Dunk each ball into the melted and prepared chocolate. Swirl around and dip the sides into the chocolate to cover 3/4 of the balls.

You want to leave a small oval shape without chocolate on the top just around where the toothpick is inserted. Once you’re done dipping, allow some excess chocolate to drip off before placing back on the parchment paper.

You can leave the toothpicks in the healthy buckeyes or you can remove them and gently use your finger to cover the toothpick whole with excess peanut butter.

Place them back in the freezer to set for 30 minutes then you’re done!

Do buckeyes need to be refrigerated?

No, you do not need to refrigerate healthy buckeyes. You just want to keep them at room temperature so they don’t melt. I recommend keeping them in the refrigerator if you can, but they don’t have to be.

If you are making the keto version of these healthy buckeyes, I would keep them in the refrigerator or freezer. The chocolate will melt a lot quicker than if you’re using chocolate chips, so keep them cold so they last longer.

However, I’m not sure these healthy buckeyes will last long enough to keep them in the refrigerator because they’re that good!

Ingredients

  • 1 1/4 cups smooth peanut butter or almond butter no sugar added
  • 1/2 cup maple syrup or 1/4 cup favorite keto sugar
  • 1/4 cup coconut oil soft
  • 1/3 cup blanched almond flour
  • 3/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 cups dark chocolate chips or chopped dark chocolate OR

For keto chocolate:

  • 2 tablespoons coconut oil melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon favorite keto sugar

Instructions 

  • In a large bowl, cream together the almond butter, maple syrup and coconut oil using an electric hand mixer until very smooth.
  • Stir in the almond flour, salt and vanilla and mix well. Chill the mixture in the freezer for 30 minutes or until firm enough to roll into balls.
  • Roll into one inch balls (about 22-25) and place on a parchment or wax paper-lined baking sheet. Put a toothpick in each one for easier dipping then place back in the freezer for 30 minutes.
  • While they're freezing, make your dipping chocolate. If using chocolate chips or chopped chocolate, simply place in a microwavable bowl and melt on increments of 30 seconds, stirring in between, until fully melted.
  • If you're making the keto version of these healthy buckeyes, melt the coconut oil, vanilla, salt, unsweetened cocoa powder and your favorite sugar substitute in a medium bowl and set aside.
  • Once balls are firm, remove from freezer and carefully dip each one in the chocolate and coat about 2/3 of the way as shown in the photos. Place back on the baking sheet and repeat for all. Once done, refrigerate or freeze until firm and serve right away.
