You can make this green juice easily in the blender and it’s cheaper than vegetable juice you’ll find at a juice bar. It’s packed with anti-inflammatory ingredients, it’s slightly sweet and very delicious!
There’s a great balance of sweetness from the apple and pineapple and zing from the ginger. You’ll taste the celery and cucumber a bit, which gives it an additional fresh flavor to go with the fresh mint.
I took a notes out of Serious Eat’s tips on how to make homemade juice, focusing on mixing high-yield ingredients with high-potency ingredients. It’s also a combination of fruits and vegggies I’d actually enjoy together!

How to Make Green Juice

1. Add to the Blender
Peel the fresh fruit and roughly chop the vegetables so they fit in the blender. I love using a high-speed blender like a Vitamix.
2. Blend on High
Blend everything on high for for a few minutes until the juice turns a deep green color and the majority of the fresh fruits and veggies are visibly broken up.
3. Strain the Juice
Cover a large bowl or measuring cup with a nut milk bag and strain the juice through it, squeezing tightly to get as much juice as possible.
4. Serve or Store
Serve the juice right away or store it in glass jars for up to 3 days. The juice will separate in the fridge so shake well first!
Make it with a Juicer
Follow the same recipe, just omit the water and cut your fruits and veggies a little smaller. Most juicers allow you to leave the skin on fruits and veggies, so that’s a personal preference. Run them through the juicer, using the tampeer as needed!
If you plan to fresh green juice frequently (or any juice), investing in a masticating is worth it because they extract the most fiber and reduce waste. Although centrifugal juicers is a great option too. You can learn the difference between each kind of juicer to decide which is best for you.

Ingredients
- 1 1/2 cups water
- 1 cup ice
- 2 cups kale or spinach
- 1 green apple cored and cut into chunks
- 1 cup pineapple fresh or canned with no sugar added
- 1/2 cup parsley leaves
- 1 tablespoon fresh mint
- 1 medium cucumber quartered
- 2 celery stalks roughly chopped
- 1 inch piece of ginger peeled
- Juice from 1 lemon
Instructions
- Wash all vegetables and fruits well. Add water to a high-speed blender then add the rest of the ingredients. Blend on the highest setting for at least one minute, until completely combined and is similar to a smoothie consistency.
- To separate the juice from the pulp, place a nut milk bag or fine mesh seive over a large glass measuring bowl (I use an 8 cup glass measuring bowl). Pour the juice mixture into the bowl through the nut milk bag, squeezing the mixture through the bag so all of the liquid and pulp is separated. Reserve the pulp to put in muffins or crackers.
- Drink immediately or place in a sealed glass jar in the refrigerator for up to 2 days. Shake well before drinking. This recipe doubles well.
