Simple and healthy meals are the name of the game in our house. We’re obsessed with one pot and sheet pan meals. Easy clean up is the way to go, right?

So here’s another one for you! It’s gluten free and dairy free and a classic meat and potatoes meal everyone will love.

Tips for making herby garlic steak bites:

  • Prep all the ingredients first. Cube the steak, cut the potatoes, stem and chop the herbs and mince all the garlic before you get started. The recipe cooks quick so this way you don’t have to stop or let anything accidentally burn.
  • Color = flavor. When you’re cooking the potatoes and steak, let them sit in the hot skillet for a few minutes before stirring to create a golden, crispy crust.
  • Reduce the amount of garlic cloves if yours are really big. Or add more if you love garlic!

How to stem and chop fresh herbs:

This recipe calls for two thick-stemmed herbs: rosemary and thyme. To use them in this recipe you need to pull the herbs off the stems before chopping.

How to do it: hold the herb from the top of the stem and run your finger down the stem from top to bottom. The herbs should fall off. The top is more tender so you can just break that off. Chop and use them in this recipe.

What if you don’t have fresh herbs? I recommend fresh for this recipe, but you can use half the amount of dry herbs if those are more handy.

What if you don’t have a cast-iron skillet?

I love a cast-iron skillet for this recipe because of how crispy it gets the steak and potatoes, but you can absolutely use a large saute pan to make it as well.

What type of steak can you use?

I used a sirloin steak for this recipe, but you could use a sirloin, New York strip or even stew meat that’s already cut.

How do you make steak tender?

Here are a few tips for making your steak tender:

  • Tenderize the meat before cutting it by using a meat mallet
  • Cut it against the grain (which you’ll be doing for these bites!)
  • Get a quality steak like a grass-fed and grass-finished steak. I love getting my beef from Butcher Box!
  • Salt and season it well.

How to make steak bites:

  1. Prep all your ingredients: mince the garlic, chop the herbs and cut the steak and potatoes
  2. Heat oil in a cast-iron skillet and add the potatoes. Cook for 6-7 minutes to crisp until fork-tender. Add half of the herbs and garlic and cook until fragrant. Remove from the pan to a plate/bowl.
  3. Add more oil then add the steak and cook until crispy and cooked all the way through. Add the rest of the herbs and garlic.
  4. Serve right away!

Herby garlic steak bites and potatoes

Ingredients

For the potatoes:

  • 1 tablespoon olive oil
  • 1 tablespoon coconut oil or ghee divided
  • 1 1/2 pounds (4 small-medium) yukon gold potatoes sliced about 1/2 inch in thickness
  • 3 garlic cloves minced
  • 1 teaspoon thyme chopped
  • 1 teaspoon rosemary chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the steak:

  • 2 tablespoons coconut oil
  • 1 1/2 pounds sirloin steaks cut into 1 inch cubes
  • 3 garlic cloves minced
  • 1 teaspoon thyme chopped
  • 1 teaspoon rosemary chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • For topping: fresh parsley

Instructions 

  • Heat a large cast iron skillet over medium high heat and add olive oil and coconut oil. Heat until hot and oil starts rippling. Add the potatoes and allow to cook for 1-2 minutes without stirring to create a crust. Continue cooking for 5-6 minutes or until potatoes are browned and fork-tender. Add the garlic, herbs, salt and pepper and continue cooking for 1-2 minutes until soft and fragrant. Remove the potatoes to a separate plate or paper towel.
  • Turn the skillet to high heat and add another 2 tablespoons of coconut oil. Add the steak bites and let the steak sear for 1-2 minutes then stir and add the minced garlic. Continue to cook until golden brown and cooked though, about 1-2 more minutes. Top with salt, pepper, rosemary and thyme and stir to combine.
  • Add the potatoes back in with the steak and stir well. Serve right away.

Notes

If you don’t have a cast-iron skillet you can use a regular skillet!
If you don’t have fresh herbs, use half the amount of dried herbs.

    I can not have coconut oil and my family and can not use ghee butter, can I use olive oil for everything?

    Hi, I am allergic to coconut and im not sure ghee will be good for my family is there anything else I can use.

      Avocado oil would probably be better as it has a higher smoke point

    I am new to the dairy and gluten free lifestyle and still having some trouble navigating it. When you call for coconut oil should it be the liquid oil or the one that’s like a cream? Or does it not matter. Looking forward to trying this recipe it looks delicious!

      Hey Amanda! Great question. Coconut oil is the white/clear oil while the cream typically comes in a can. If the recipe calls for the cream I’ll call it full-fat coconut milk/cream. Hope that helps!
