Chocolate Cashew Energy Bars

  • Cashew Energy Bars:
  • 1½ cups raw unsalted cashews
  • 10 whole mejdool dates, pitted
  • 2 tablespoons pure maple syrup
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • Chocolate Topping:
  • ½ cup cocoa powder
  • ¼ cup coconut oil, melted
  • ¼ cup pure maple syrup
  1. Line a standard bread pan with aluminum foil and set aside.
  2. Place the cashews, dates, maple syrup, salt and vanilla in the food processor. Blend until well mixed, but not smooth, about 1 minute. See picture in above post for reference.
  3. Dump mixture into prepared bread pan and press down firmly using a rubber spatula. Place in the freezer to set.
  4. While setting, make the chocolate topping. In a small bowl, combine the cocoa powder powder, melted coconut oil and pure maple syrup until smooth. Pour over bars and place back in the freezer for 1 hour to chill. Cut into bars and serve.
